Tasty Tofu?!

I have always been one of those people terrified of tofu. 

Its spongy, wet, tasteless and kinda weird…and I mean honestly the best name we could come up with for this is “tofu”? 

Anyway-I’ve faced my fears head on and have been bravely experimenting with this curd of bean….

Today, I made Tofu “egg” scramble again and its very tasty. 

Yes I am still technically on the Raw challenge, buuutt…I cheated…. Ha! 

Rules are made to be broken?! It was a very tasty and healthy cheat. 

Baruch HaShem !


1/4 red onion

1/4 bell pepper(any color except green)

Garlic (as much as you like)

Handful of Spinach



Xtra firm Tofu(not optional unless you use egg) As much or as little as you want really

1/2 tsp dried parsley

1/4 tsp turmeric

1/4-1/2 tsp cumin

Sprinkle of salt and Pepper

Sprinkle of smoked paprika


Sautee onions and pepper till soft, add garlic, add taters

(fyi my taters are already cooked-i bake them early in the week and put them in the fridge), add mushrooms, add tofu (pat dry with paper towel) and slice a piece off and crumble into pan. Add seasonings, then stir around to heat the tofu, then add the spinach and take off the heat. Stir the spinach in til its lightly wilted. (It will continue to cook even after you plate it.) 

I added Avocado and grape tomatoes to the top afterwards
